I have to second Octavia Butler, she's an important part of Sci-Fi literature.
Hmm, those are the only ones I would be readily aware of.
I would like to suggest anthologies edited by Lori M. Carlson, which will introduce readers to several wonderful voices--Red Hot Salsa: Bilingual Poems on Being Young and Latino in the United States (Henry Holt, 2005) and Moccasin Thunder: American Indian Stories for Today (HarperCollins, 2005).
